Hmmm... I made turkey porchetta (the Serious Eats sous vide recipe) twice for my group's weekly potluck dinner in the two weeks before Thanksgiving.

Everyone seemed to love it (there were no leftovers either time), but I think I'd be pushing my luck trying to serve it a third straight time, particularly since I gotta figure that everyone is pretty much turkeyed-out right now. 🀣

But if my local Amazon Fresh has any $5 turkeys remaining a week from now or so, I'd be willing to give it another go. I've gotten pretty efficient at dismembering turkeys into their various constituent parts. πŸ˜‚

I wasn't the OP the posted that comment, I'm just replying because I, too, was curious. That being said, hope things have changed. Butterball is a brand available at Costco - and from what I understand they do plenty of vetting themselves.
