You probably need to be zone 8 or higher at this point in the year to plant these. Hydrangeas need time to take up water and acclimate before frost sets in.

Could you just keep um in the bucket until spring?

Maybe but I'd definitely up-pot them so the roots have plenty of soil to get nutrients and water from. Not sure if you'd need to keep them indoors or whether they could handle winter temp dormancy in a pot if you kept them well watered.
