Is this good for expanding storage on a Mac Mini (M1) ?
No. The drive will work, but it's crazy overkill for your situation and would only be worth it if you use it in another device in the future. Your mini has Thunderbolt 3 / USB 4. You aren't even going to hit 4GB/s in an external enclosure. You won't even be getting 1/3 of potential sequential performance out of this drive. You can buy a cheaper PCIe 4.0 SSD.

It would also probably overheat in an external enclosure unless you spend lots of money on a robutst one with active cooling.
I'm not sure whether or not it will work in the PS5, but either way you're better off with a Gen 4 NVMe in the PS5. Even if a Gen 5 drive does work, it will be at Gen 4 speeds--which would defeat the purpose of paying extra for the higher speeds.

With Optane becoming further and further in the rearview mirror, top-tier PCIe Gen5x4 8ch NAND+DRAM NVMe drives are one's best hope for 4K Random performance (ie, felt performance).
I decided to 'go ham' on a 4TB SN8100 but the T710 was a vey attractive competitor. IIRC, The T710s in-particular were very cool-running drives (for being Gen5x4).

Very nice deal, and if these run anything like the Gen5 SSDs I have, they run hot and you'll want to have a heatsink. I have one without a heatsink (will be putting one on it soon) and one of my temp sensors regularly reports 90c
