Here's a slick recipe:
4 cups of bread flour, 2 Tablespoons of brown sugar, 1 pack of instant yeast, 1.5 teaspoon of salt.
1.5 cups of warm water (nuke for 15-20 seconds), 1/4 cup oil or melted butter.
Mix everything in a mixer for 5 min. Let it proof for 1.5 hours, then you have dough for pretzels or bagels.
Roll out, shape, then dip it in hot water with baking soda. Brush it with egg wash, and bake at 450 for 10-12 min. Brush the pretzel with additional melted butter. Then sprinkle salt or cinnamon sugar to your liking.
That's the recipe for pretzels that's pretty close to mall-bought pretzels.
